- 2 tbsp butter
- 1 medium onion, chopped
- 3 cups sliced mushrooms
- 1 cup uncooked converted rice
- 1/2 tsp salt
- 2 1/2 cups water
- 1 envelope Lipton Soup Mix (try to find Golden Herb w/Lemon)
- 2 tbsp heavy cream or milk
- 2 tbsp bacon bits (optional)
Directions:
- In a 3-qt saucepan, melt butter; cook onion and mushrooms over medium heat until tender, stirring occasionally.
- Stir in rice, salt, soup mix, and water.
- Simmer covered over low heat for 15 minutes or until rice is tender and liquid is absorbed, stirring frequently.
- Stir in cream.
- Sprinkle with bacon and garnish with fresh parsley, if desired.
