Ingredients:
- 3/4 cup cold water
- 1/2 lb lean ground beef
- 1/2 green bell pepper, chopped
- 1 8-oz can tomato sauce
- 1 cup whole kernel corn, frozen or canned, drained
- 1/4 cup chopped black olives
- 1/2 tsp salt
- 1 tsp chili powder
- 2 dashes ground cumin
- 1 cup cheddar cheese, shredded
- Sour Cream
Tamale Corn Meal Topping:
- 1/2 tsp salt
- 1/3 cup yellow cornmeal
- 1 tbsp butter
Instructions:
- Pre-heat oven to 375 degrees.
- In a medium-size pan over medium heat, brown the ground beef. Add the onions and green pepper, stir and cook until soft.
- Add the tomato sauce, corn, black olives, salt, chili powder, and cumin. Add 3/4 cups water. Stir. Turn the heat down to low and simmer about 15 minutes. Add in the cheese and stir until melted.
- Pour into an 8x8 inch baking dish.
Prepare the Topping:
- In a small saucepan on top of the stove, place 3//4 cup of cold water, salt, and corn meal. Stir. Bring to a boil and stir until thick. (Don't let it burn.)
- Take off the heat and add butter.
- Mix and spread evenly on top of casserole.
- Bake uncovered at 375 degrees for about 40 minutes.
- Serve immediately. (Top with sour cream if you feel so inclined.)
