Tamale Casserole

Ingredients:

  • 3/4 cup cold water
  • 1/2 lb lean ground beef
  • 1/2 green bell pepper, chopped
  • 1 8-oz can tomato sauce
  • 1 cup whole kernel corn, frozen or canned, drained
  • 1/4 cup chopped black olives
  • 1/2 tsp salt
  • 1 tsp chili powder
  • 2 dashes ground cumin
  • 1 cup cheddar cheese, shredded
  • Sour Cream
Tamale Corn Meal Topping:
    • 1/2 tsp salt
    • 1/3 cup yellow cornmeal
    • 1 tbsp butter

Instructions:

  1. Pre-heat oven to 375 degrees.
  2. In a medium-size pan over medium heat, brown the ground beef. Add the onions and green pepper, stir and cook until soft.
  3. Add the tomato sauce, corn, black olives, salt, chili powder, and cumin. Add 3/4 cups water. Stir. Turn the heat down to low and simmer about 15 minutes. Add in the cheese and stir until melted.
  4. Pour into an 8x8 inch baking dish.
Prepare the Topping:
    • In a small saucepan on top of the stove, place 3//4 cup of cold water, salt, and corn meal. Stir. Bring to a boil and stir until thick. (Don't let it burn.)
    • Take off the heat and add butter.
    • Mix and spread evenly on top of casserole. 
    • Bake uncovered at 375 degrees for about 40 minutes.
    • Serve immediately. (Top with sour cream if you feel so inclined.)
