- 2 eggs, separated
- 1 1/2 cups mashed banana
- 1 cup milk
- 1 tbsp melted butter
- 1 cup flour
- 2 tbsp sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/8 tsp cinnamon
Instructions:
- In medium bowl, combine yolks and next 3 ingredients
- Add dry ingredients and stir just until blended.
- Beat egg whites until stiff. Fold into banana mixture.
- Use 1/4 cup batter for each pancake and cook on hot griddle for 3-5 minutes.
- Turn gently, they are a very tender and light pancake.
- MUST serve with coconut syrup! ;)
COCONUT SYRUP
Ingredients:
- 3/4 cup canned cream of coconut
- 2 tbsp butter
- 1 tbsp lemon juice
