Banana Pancakes with Coconut Syrup

Ingredients:

  • 2 eggs, separated
  • 1 1/2 cups mashed banana
  • 1 cup milk
  • 1 tbsp melted butter
  • 1 cup flour
  • 2 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/8 tsp cinnamon
Instructions:
  • In medium bowl, combine yolks and next 3 ingredients
  • Add dry ingredients and stir just until blended. 
  • Beat egg whites until stiff. Fold into banana mixture. 
  • Use 1/4 cup batter for each pancake and cook on hot griddle for 3-5 minutes.
  • Turn gently, they are a very tender and light pancake.
  • MUST serve with coconut syrup! ;)

COCONUT SYRUP

Ingredients:
  • 3/4 cup canned cream of coconut
  • 2 tbsp butter
  • 1 tbsp lemon juice
