3 eggs
1 cup sugar
1 cup brown sugar
1 cup oil
Cream together
Add:
3 cups flour
1 tsp salt
1 tsp soda
1/4 tsp baking powder
3 tsp cinnamon
Add: 2 cups grated, peeled zucchini
3 tsp vanilla
1 cup nuts (optional)
Sprinkle with cinnamon sugar then bake at 350 degrees for 20-25 minutes.
(about 30 muffins)
