Chocolate Marshmallow Brownies

From Six Sisters Stuff Cookbook

1 cup butter, softened
2 cups sugar
1/3 cup cocoa
4 eggs
1 1/2 cups all-purpose flour
1 tsp salt
2 tsp vanilla
1 (10-oz) package miniature marshmallows
Mom's Chocolate Frosting (see recipe below)

Preheat oven to 350 degrees F. Grease a 10x15 rimmed baking sheet.

Cream together butter, sugar, and cocoa in a large bowl. Add eggs, one at a time, mixing well after each addition. Add flour, salt, and vanilla and mix well. Spread on prepared baking sheet. Bake 22 to 25 minutes. Brownies are done when a toothpick inserted in the middle comes out clean. Remove from oven and cover entire top with miniature marshmallows. Return to oven for 3 minutes, until marshmallows are soft and puffy. Cool and frost with frosting.

Makes 2 to 3 dozen brownies.

Mom's Chocolate Frosting:
1/2 cup butter, softened
1/4 cup milk
1 tsp vanilla
3 tbsp cocoa
2 to 3 cups powdered sugar

Beat all ingredients with an electric mixer until smooth. Add more powdered sugar or milk until you reach desired consistency.
